WSTA offers a carcass evaluation service in Alberta and BC in cooperation with Olymel in Red Deer Alberta and Johnston Meats in Chilliwack, B.C.  Through the cooperation of these plants we are able to offer a partial carcass cut-out with the following measurements taken:

Carcass Yield and Quality

  • Hot Carcass Weight

  • Grade and Yield Information

  • Primal Cut Weights

  • Loin Eye Area

  • Japanese "1/4 x 0" loin weight


Meat Quality

  • Meat Colour (Japanese scale)

  • Marbling Score

  • pH

  • Drip Loss
